Cucumbers with Sesame Oil

  • 7 Persian cucumbers
  • 1 tablespoon salt
  • ⅛ teaspoon sugar
  • 2 teaspoons sesame oil
  • ⅛ teaspoon white pepper
  • 1 teaspoon toasted sesame seeds


  1. Slice Persian cucumbers into ¼-inch slices and toss in a large bowl with salt.
  2. Let salted cucumbers sit in the fridge for at least an hour, or up to 4 hours, to draw out the moisture (this will help ensure you have crunchy cucumbers).
  3. Rinse salted cucumbers thoroughly (I like to wash them at least twice). You can do a taste test; if the cucumbers are still too salty for your liking, give them another rinse.
  4. Add sugar, sesame oil, and white pepper. Toss until all ingredients are well incorporated.
  5. Place in the fridge to chill for 30 minutes.
  6. Before serving, sprinkle toasted sesame seeds on top of the “pickles.”
  7. Consume immediately!
